Ascorbic acid or Vitamin C, also known as and L-ascorbic acid, is a vitamin found in food and used as a dietary supplement. As a supplement it is used to treat and prevent scurvy. It is generally well tolerated. Large doses may cause gastrointestinal discomfort, headache, trouble sleeping, and flushing of the skin. Normal doses are safe during pregnancy. Vitamin C is an essential nutrient involved in the repair of tissue. Foods that contain vitamin C include citrus fruit, tomatoes, red peppers, and potatoes. It is also used as oxidation retarder in chemical analysis.

DESCRIPTION
Ascorbic Acid occurs as white or slightly yellow crystals or as powder. It melts at about
190C. It gradually darkens on exposure to light, is reasonably stable in air when dry, but rapidly
deteriorates in solution in the presence of air. One gram is soluble in about 3 mL of water and in
about 30 mL of alcohol. It is insoluble in chloroform and in ether.
Function: Antioxidant; meat-curing aid; nutrient.
